Grilled Sirloin Steak Kabobs with Spinach and Arugula Salad

Ingredients
- 2 lb lb top sirloin steak cut into 1-inch cubes
- 4 tbsp Halo no-soy soy sauce
- 4 tbsp olive oil divided
- 4 cloves garlic minced
- 1/4 tsp pepper divided
- 1 red bell pepper cut into 1-inch pieces
- 1 green bell pepper cut into 1-inch pieces
- 1 red onion cut into small wedges
- 1 cup pineapple chunks cut into 1-inch pieces
- 2 cup spinach
- 2 cup arugula
- 2 tbsp balsamic vinegar
- 1/8 tsp Salt to taste
Instructions
- **Marinate the Steak:**
- - Combine the steak, soy sauce, oil, and garlic in a large zip-top plastic freezer bag. Seal the bag, and refrigerate for at least 3 to 8 hours, turning occasionally to coat.
- **Prepare the Kabobs:**
- - Preheat the oven to 450 degrees.
- - Remove the beef from the marinade and sprinkle the beef with pepper.
- - Alternately thread the beef, red bell pepper, green bell pepper, onion, and pineapple onto 4 metal or bamboo skewers. If bamboo be sure to soak prior to assembling.
- **Bake the Kabobs:**
- - Place the skewers on a baking sheet, line with aluminum foil.
- - Bake the kabobs for 10 to 15 minutes or until the desired doneness is reached (135°F for medium-rare). Rotate half way through.
- **Prepare the Salad:**
- - In a large bowl, combine the spinach and arugula.
- - In a small bowl, whisk together the balsamic vinegar and olive oil. Season with salt and pepper to taste.
- - Drizzle the dressing over the salad and toss to coat.
- **Serve:**
- - Serve the grilled kabobs hot alongside the fresh spinach and arugula salad.
