Chicken Marsala with Mozzarella and Broccoli Tomato Salad

Ingredients
- 8 oz portobello mushrooms sliced
- 2 tbsp olive oil divided
- 1.5 lb chicken breast skinless boneless
- 3/8 tsp pepper divided
- 1/4 cup all-purpose flour
- 1 cup Swanson unsalted chicken broth
- 6 tbsp Marsala wine
- 3/4 tsp cornstarch
- 1 1/2 tsp water
- 3 slices mozzarella cheese
- 1 lb broccoli florets lightly steamed and cooled
- 1 cup cherry tomatoes halved
- 1 small red onion thinly sliced
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic minced
Instructions
- **Prepare the Chicken Marsala:**
- - Season the chicken breasts with pepper and lightly coat with flour.
- - In a large skillet, heat 1/2 Tbsp of olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and keep warm.
- - In the same skillet, add 1/2 Tbsp of olive oil. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
- - Stir in the chicken broth and Marsala wine, scraping up any browned bits from the bottom of the skillet.
- - In a small bowl, mix the cornstarch with water to form a slurry. Add the slurry to the skillet and cook until the sauce thickens, about 2 minutes.
- - Return the chicken to the skillet and spoon some of the sauce and mushrooms over the top. Place a slice of mozzarella cheese on each chicken breast. Cover the skillet and cook until the cheese is melted, about 2 minutes.
- **Prepare the Broccoli Tomato Salad:**
- - In a large bowl, combine the steamed broccoli florets, cherry tomatoes, and red onion.
- - In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, and pepper to make the dressing.
- - Pour the dressing over the salad and toss to combine.
- - Serve the Chicken Marsala hot, topped with melted mozzarella and mushrooms, alongside the fresh broccoli tomato salad.
